Dickens Family Christmas Fudge Recipe by Clive Dickens

Everyone on the first floor seemed to enjoy the our ‘secret’ recipe fudge, after popular request we have decided to reveal the recipe

It’s definitely one for those that “can’t cook” to impress friends and family!!

• Firstly, line a shallow tray approx 20 x 30 cm with either foil or greaseproof paper.
• Open a tin of condensed milk (the oddly precise 397G size), pour into a microwave-proof bowl.
• Break 500g of chocolate into small pieces and put into the bowl, on top of the condensed milk. For plain and milk chocolate add about a dessert spoon of unsalted butter as well. White chocolate won’t need any butter added.
• Put the bowl into the microwave on high for about 90 seconds. Take out, and stir well, distributing the heat evenly and encouraging the chocolate pieces to melt.
• Place back in the microwave for another 60 seconds, take out again and stir thoroughly. The chocolate should be completely melted by now.
• Pour the mix into the prepared tray, and spread out with a spatula so it reaches all the edges.
• Place in fridge to set, being sure that it is level and nothing can fall on top of the fudge or spill on it.
• It should be set within 12 hours, but leave it for 24 if you can. Remove from the tray and gently peel off whatever you have used to line the tray from the back of the large block of fudge. Rest the fudge on a clean surface and chop into pieces with your biggest, scariest knife. Rest a folded teatowel on the top surface of the knife so you don’t hurt your hands pressing down to cut into pieces.

Flavoured chocolate like orange, mint or ginger works really well, as does fruit and nut chocolate. Just remember, the better quality the chocolate, the nicer the fudge.

Enjoy – and remember to pretend it took AGES to make!

    Yeah it’s a nice fudge, but the recipe is a basic one and is certainly no secret!
